Mom’s Lasagna (meatless)

12 lasagna noodles
1 large jar spaghetti sauce
1 lb. meatless crumbles or vegan patties (
1 c. parmesan cheese
16 oz. cottage cheese
2 eggs
1 T parsley
2 c. mozzarella cheese

Add meatless crumbles or vegan patty mixture to sauce. Set aside. Mix cottage cheese, eggs, parmesan cheese and parsley together. Set aside. Bring noodles to a boil and boil for 8 minutes. Drain. Spray 9×13 pan. Spread a thin layer of sauce on the bottom of pan. Add a layer of noodles, a layer of sauce and a layer of cheese mixture. Repeat 3 times. Top with mozzarella cheese. Cover with foil and bake at 350˚ for 45 minutes. Uncover and bake for 10 minutes.
